What are the different types of Sugar and their usage?

Sugarcane and Sugar beets are the major contributors in sugar production. Both produces raw sugar juice which undergoes different processing stages to produce varieties of sugar. Molasses is a byproduct of sugar which is rich in vitamins and minerals.
Raw Sugarcane Juice
Refined: Molasses completely removed.
White sugar, Confectioners' sugar, liquid sugar.
Use: Household use, baking, candies, packed food, ice cream.
Semi-Refined: Considerable amount of molasses removed depends on the sugar variety produced.
Demerara, Organic sugar.
Uses: Household baked items, hot beverages, cooking. Mostly used as an alternative to white sugar.
Partially Refined: Almost an Unrefined sugar.
Uses: Hot beverages in restaurants, sauces, marinades, cookies, fruit cakes, pastries.
Unrefined: Rich in molasses.
Whole cane sugar, Jaggery, Sucanat, Piloncillo.
Uses: It has a smoky molasses flavor. sauces, barbecue meat, spice cakes and cookies, hot beverages.
Brown sugar is manufactured in two ways.
1. Directly during refining process. Demerara, muscavado, Turbinado are kinds of brown sugar.
2. Combining white sugar or organic sugar with molasses.
Depends on the quantity of molasses brown sugar can be further classified as,
Dark brown sugar,
Yellow brown sugar,
Light brown sugar,
Uses: Baking, Hot beverages, meat glazes. An alternative to white sugar.
Dark colored syrup.
Uses: Baking, yeast production, alcohol production.
